This is an experimental microlot designed using a controlled anaerobic fermentation protocol for 5 days, followed by slow drying on covered suspended beds for 45 days.
The goal was to maximize aromatic complexity without compromising physicochemical stability.
The result is a high-density coffee (720 g/L), with integrated vinous acidity and an extremely expressive profile: ripe red fruits, tutti-frutti, pineapple, plum, chocolate, and caramel, with a persistent sweet structure.
It is a lot with a bold sensory signature, yet technically stable, designed for roasters who want to launch limited editions with real scientific storytelling.
